Ingredients

2 racks of lamb , with 8 cutlets each
1/2 cup olive oil
1 bunch basil leaves , chopped coarsely
4 garlic cloves , crushed
2 tablespoons grainy mustard ( or more if you prefer )
2 teaspoons olive oil
1 medium brown onion , diced
1 garlic clove , crushed
3/4 cup dry white wine
1 chicken stock cube
400 ml cream ( can be light )
1 bunch basil , chopped coarsely
1 -2 teaspoon cornflour , to thicken

Instructions

1.Preheat oven to 200°C/180°C fan/gas mark 6.
2.Rub each lamb rack with olive oil and season with salt and pepper.
3.In a bowl, combine the chopped basil, crushed garlic, and grainy mustard. Spread this mixture over the lamb racks.
4.Place the lamb racks into a roasting dish and roast in the oven for 20-25 minutes or until the lamb is cooked to your liking.
5.Meanwhile, heat the olive oil in a large saucepan over medium heat. Add the diced onion and cook for 5 minutes until softened.
6.Add the crushed garlic and cook for 1 minute until fragrant.
7.Add the white wine and chicken stock cube and bring to a boil. Simmer for 5 minutes until the liquid has reduced by half.
8.Add the cream and chopped basil to the pan and bring to a simmer. Let it cook for around 5 minutes until thickened slightly.
9.Add the cornflour and mix until combined. Cook for a further 2-3 minutes until the sauce has thickened. Season with salt and pepper as required.
10.Serve the lamb racks with the basil cream sauce on the side.
