Ingredients

1 whole chickens
2 onions
6 celery ribs
6 carrots
2 bay leaves
2 fresh thyme sprigs

4 ounces smoked bacon , lardons
3 small turnips , peeled and cut into wedges
1 tablespoon plain flour
2 tablespoons coarse grain mustard
3 tablespoons creme fraiche or 3 tablespoons sour cream
1/4 cup parsley , chopped

Instructions

1.Preheat the oven to 180C/350°F. Take a roasting tray and add in the chicken along with some onions, celery ribs, carrots, bay leaves, thyme sprigs and black peppercorns. Pour water enough to cover it and roast for 1 hour.
2.After an hour, heat some butter in a frying pan and fry the smoked bacon lardons until golden. Add the turnip and fry for a few minutes. Sprinkle some plain flour over the top and stir in some grain mustard and crème fraiche. Cook for a minute or two and pour the sauce over the chicken. Mix parsley into a fine paste and sprinkle on top of it.
3.Serve the delicious chicken along with winter vegetables.
