Ingredients

For the Chicken :
1 whole chicken
1 stalk spring onion ( optional )
3 cloves garlic , crushed , or to taste
1 piece fresh ginger root ( optional )
water to cover
salt to taste
For the Soy Sauce :
5 tablespoons light soy sauce
1 1/2 tablespoons white sugar , or to taste
1 tablespoon garlic oil ( optional )
1 teaspoon sesame oil
For the Rice :
3 cups uncooked rice , or more to taste
3 cloves garlic , minced , or to taste
1 piece ginger , crushed
salt to taste
For the Garlic Chile Dip :
5 red chile peppers , seeded and chopped
2 limes , juiced
3 cloves garlic
1 piece ginger
1/4 teaspoon salt
1 pinch white sugar , or to taste
Ginger Dip :
2 limes , juiced
3 cloves garlic
1 piece young ginger
1/8 teaspoon salt
Hainanese Chicken Rice is a traditional dish from Hainan province in China. It is a popular dish in Southeast Asia, and is ranked as one of the world's 50 most delicious foods. This dish features poached chicken, served with fragrant rice that has been cooked in chicken broth and seasoned with garlic, ginger, and other spices. It is commonly served with dipping sauces, such as chili or ginger sauce.

Instructions

1.For the Chicken:
2.Rinse chicken under cold running water, removing any feathers or innards. Pat dry and rub salt all over the chicken.
3.In a large pot, add the garlic, ginger and spring onion (if using) to the water and bring it to a boil. Add the chicken, breast side down, into the pot and bring it to a boil again. Cover the pot with a lid and turn off the heat. Let chicken sit in the pot for 30 minutes.
4.Remove the chicken from the pot and plunge it into an ice bath to stop cooking. Reserve the chicken stock for cooking the rice.
5.For the Soy Sauce:
6.In a separate bowl, combine light soy sauce, white sugar, garlic oil (if using) and sesame oil. Set aside.
7.For the Rice:
8.Rinse the rice under running water until the water runs clear. Drain well.
9.In a large pot, heat some oil. Add ginger and garlic and fry until fragrant. Add the rice and salt to taste.
10.Add enough chicken stock to cook the rice. Bring it to a boil and reduce the heat to low. Cover with a lid and simmer for 18-20 minutes. Turn off the heat and let it sit for another 10 minutes.
11.For the Garlic Chile Dip:
12.In a blender, combine all ingredients and blend until smooth.

14.In a bowl, combine lime juice, garlic, young ginger and salt. Stir to combine.
