1 1/2 lbs black mussels

2 tablespoons tomato paste
1/2 teaspoon sugar
1 tablespoon red wine vinegar
2 1/4 ounces feta cheese , crumbled
1 teaspoon fresh thyme leave

Instructions

5.Add the finely chopped tomatoes, tomato paste, sugar, and red wine vinegar. Cook for 6-8 minutes, stirring occasionally, until the sauce has thickened and reduced.
6.Add the mussels to the skillet, along with any accumulated juices, and stir to combine with the tomato sauce.
7.Sprinkle the crumbled feta cheese and fresh thyme over the top of the mussels.
8.Turn on the broiler to high. Place the skillet under the broiler for 2-3 minutes until the cheese has melted and browned slightly.
9.Serve immediately, garnished with fresh herbs if desired.
