Ingredients

3 lbs mussels , with shells
2 tablespoons butter
1 tablespoon garlic , diced finely
1 1/2 cups dry white wine
2 teaspoons saffron threads
1 cup Clamato juice
2 tablespoons lime juice
1/4 cup spring onion , diced
3 teaspoons madras hot curry powder
3 teaspoons madras mild curry powder
1 1/2 cups fire-roasted tomatoes , diced
1/2 teaspoon sea salt , to taste

Instructions

1.In a large pot, melt the butter over medium heat.
2.Add the garlic and cook for 1-2 minutes until fragrant.
3.Add the white wine, saffron threads, Clamato juice, lime juice, and spring onion to the pot and bring to a simmer.
4.Stir in both madras curry powders and the diced tomatoes and cook for 5 minutes.
5.Add the mussels to the pot and cover with a lid. Cook for 5-7 minutes or until the mussels have opened up.
6.Discard any mussels that haven't opened. Season with sea salt to taste and serve hot.
