Ingredients

1 kg live mussels
1 onion , finely chopped
2 tablespoons chopped parsley
100 ml double cream
100 ml light wheat beer ( Hoegaarden )

Instructions

1.Rinse and scrub the mussels in cold water, then remove the beards (the hairy parts sticking out of the shells).
2.Discard any mussels that do not close when tapped as they may be dead.
