Ingredients

1 1/2 lbs leeks , quartered lengthwise , then sliced crosswise

3 lbs mussels , scrubbed well and beards removed if attached ( preferably cultivated )
1 cup half-and-half
1/4 teaspoon salt
1/4 teaspoon coarsely ground white pepper
1 firm-ripe avocados
18 very small grape tomatoes , halved
3 tablespoons coarsely chopped fresh dill

Instructions

1.Heat butter in a large heavy pot over medium heat and add leeks and thyme. Cook for around 5 minutes until the leeks have softened.
2.Add lager and water to the pot then increase the heat and bring the mixture to a boil.
3.Add mussels and stir well to coat. Cover and cook for around 5 minutes or until the mussels have opened.
4.Strain the soup into another pot, discarding herbs left in the strainer.
5.Over low heat, add half-and-half, salt, and pepper to the soup, stirring continuously until heated through.
6.Ladle soup into bowls then cut the avocado into small cubes and divide evenly amongst the bowls. Add tomato halves and sprinkle dill on top of each serving.
