Ingredients

1 lb firm tofu
2 cups dried shiitake mushrooms
2 cups mung bean sprouts
3 green onions , chopped finely
1 ball bean thread noodles ( fensi )
2 inches minced ginger
6 garlic cloves , chopped
2 tablespoons sesame oil
1 teaspoon salt
1 tablespoon soy sauce
100 dumpling wrappers ( shui jiao pi )
Mushroom Tofu Jiaozi is a delicious, vegetarian-friendly take on Chinese dumplings. They are stuffed with a mouth-watering mixture of crumbled tofu, finely chopped shiitake mushrooms, bean thread noodles, and fresh mung bean sprouts, flavored with a mixture of garlic, ginger, sesame oil, and soy sauce. The filling is then wrapped in thin dumpling wrappers and boiled until cooked. These dumplings are perfect for sharing with family and friends and are full of protein, fiber, and various vitamins and minerals. They can be served as a starter, main dish or a snack.

Instructions

1.In a bowl, crumble the tofu, finely chop the shiitake mushrooms, and mix both together with salt.
2.Cover the bean thread noodles with warm water in a bowl and set aside for 5 minutes until they are soft.
3.Meanwhile, heat a frying pan with 2 tablespoons of sesame oil and fry the green onions, minced ginger, and chopped garlic at medium-high heat for around 2 minutes.
4.Drain the bean thread noodles and add them to the frying pan with the mung bean sprouts and 1 tablespoon of soy sauce.
5.Stir fry all the ingredients together in the pan for 1-2 minutes before adding them to the tofu and mushroom mixture.
6.Mix all the ingredients thoroughly until you have a uniform filling mixture.
7.Scoop around 1 tablespoon of filling on top of each dumpling wrapper and fold into your desired shape before boiling the dumplings for 2-3 minutes.
8.Serve with your favorite dipping sauce and enjoy!
