Ingredients

1 small onion , minced to 1/2 cup
2 tablespoons unsalted butter
1/2 lb mushroom , finely chopped
1 tablespoon dry sherry
1/2 teaspoon nutmeg
1 package puff pastry sheets , thawed according to package directions ( find this in the frozen dessert section )
14 ounces brie round , chilled ( Note this is a larger size , up to 17 oz , which is not available in all grocery stores )
1 large egg

Instructions

1.Preheat the oven to 375°F.
2.In a small frying pan, saute onion in butter until translucent. Add mushroom, and cook over medium heat until the mushroom gives off its liquid.
3.Add sherry and nutmeg. Cook until all the liquid evaporates from the pan. Set aside. Unfold one sheet of pastry onto a lightly floured sheet of parchment paper, and roll it into a 16 x 10-inch rectangle. Place it onto a baking sheet. Lightly score pastry dough 1 inch in from the edges to mark a rectangle inside the dough. Prick dough inside rectangle all over with a fork. Cut the chilled brie in half horizontally and place the bottom half of the brie, cut side up, onto the center of the dough. Spoon the mushroom mixture on top of the brie. Place the other half of the brie, rind down, on top of the mushrooms. Fold the puff pastry up and over the brie, pleating it to enclose the cheese. Brush the egg wash around the edge of the dough, and fold over the sides to enclose the cheese completely. Lightly brush the rest of the puff pastry with egg wash. Bake for 20 to 25 minutes or until the pastry is golden brown. Let stand for 15 minutes before serving.
