1 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
1 cup arborio rice
3 cups vegetable broth
1/2 cup white wine
1/2 cup grated parmesan cheese
1/4 cup chopped parsley
8 oz mushrooms, sliced
Salt and pepper to taste

Instructions

1.Heat olive oil over medium heat in a large saucepan. Add onions and garlic and sauté until onions are translucent.
2.Add arborio rice and stir for 2-3 minutes until rice is lightly toasted.
3.Add 1/2 cup of vegetable broth and stir until the broth is absorbed. Continue adding broth 1/2 cup at a time, stirring until absorbed each time.
4.After 2 cups of broth have been added, stir in sliced mushrooms.
5.Continue adding broth until the rice is cooked and creamy.
6.Stir in white wine, parmesan cheese, and chopped parsley.
7.Season with salt and pepper to taste. Serve hot.
