1 tbsp olive oil | |
1 onion, diced | |
2 cloves garlic, minced | |
1 cup arborio rice | |
3 cups vegetable broth | |
1/2 cup white wine | |
1/2 cup grated parmesan cheese | |
1/4 cup chopped parsley | |
8 oz mushrooms, sliced | |
Salt and pepper to taste |
1. | Heat olive oil over medium heat in a large saucepan. Add onions and garlic and sauté until onions are translucent. |
2. | Add arborio rice and stir for 2-3 minutes until rice is lightly toasted. |
3. | Add 1/2 cup of vegetable broth and stir until the broth is absorbed. Continue adding broth 1/2 cup at a time, stirring until absorbed each time. |
4. | After 2 cups of broth have been added, stir in sliced mushrooms. |
5. | Continue adding broth until the rice is cooked and creamy. |
6. | Stir in white wine, parmesan cheese, and chopped parsley. |
7. | Season with salt and pepper to taste. Serve hot. |
