Ingredients

8 large field mushrooms
4 garlic cloves , unpeeled
olive oil
salt , to taste
fresh ground pepper , to taste
1/2 cup milk , low fat is fine
1 tablespoon plain flour
1 teaspoon mustard powder
1 tablespoon Worcestershire sauce
400 g grated cheese , a tasty variety
165 g fresh breadcrumbs
120 ml Guinness stout
fresh ground pepper , to taste
1 egg
1 egg yolk
Mushroom Rarebit is a savoury dish that originated in Wales but has become popular all over the world. It is an adaptation of Welsh Rarebit which is a cheese-based dish. The main difference is that instead of bread, it uses roasted mushrooms as a base, and is topped with a rich and flavourful sauce made from cheese, breadcrumbs, Guinness, and other ingredients. The dish is quick and easy to make, and is a great way to get your daily dose of vegetables.

Instructions

1.Preheat oven to 200°C (180°C fan forced).
2.Wipe the mushrooms clean and remove the stalks.
3.Place the mushrooms, garlic and around 2 tablespoons of olive oil in a baking dish. Season with salt and pepper. Roast for 20 minutes until tender.
4.In a saucepan, heat the milk gently over low heat. In a separate bowl, combine the flour, mustard powder and Worcestershire sauce. Gradually add the milk to the bowl and stir to combine.
5.Pour the mixture back into the saucepan and cook over low heat, stirring continuously until the sauce thickens.
6.Add half the grated cheese, breadcrumbs and Guinness to the sauce and stir to combine. Season with black pepper.
7.In a small bowl, beat together the egg and egg yolk before adding to the sauce, stirring all the while.
8.Spoon the sauce over the roasted mushrooms and sprinkle the remaining cheese over the top. Return the dish to the oven and bake for 20 minutes until the cheese is melted and golden.
9.Serve with a side salad.
