Mushroom Ragout over Soft Polenta is a comforting and satisfying dish that is perfect for a cool fall evening. The mushrooms are cooked in a fragrant sauce with garlic, parsley, and basil, and served over creamy polenta. This dish originated in Northern Italy, where polenta is a staple food. Traditionally, polenta was made by stirring coarsely ground cornmeal in a pot of boiling water for hours until it became a thick porridge-like consistency. Today, instant polenta makes the process much easier, but the results are just as delicious.

Instructions

.In a large skillet, heat the olive oil over medium-high heat.
.Add the garlic and shallot and cook until softened and fragrant.
.Add the parsley, basil, and chili pepper flakes and cook for another minute.
.Add the mushrooms and cook until they release their liquid and start to brown.
.Add the white wine or water and continue cooking until the liquid has mostly evaporated.
.Season the mushroom ragout with salt and pepper to taste.
.In a large pot, heat the olive oil over medium-high heat.
.Add the onion and chili pepper flakes and cook until the onion is softened and translucent.
.Add the vegetable broth and salt and bring to a boil.
.Slowly whisk in the cornmeal and reduce the heat to low.
.Cook the polenta, stirring occasionally, for 10-15 minutes or until thick and creamy.
.Stir in the grated fontana cheese and parmesan cheese.
