Instructions

1.Heat olive oil in a skillet over medium heat. Add sliced mushrooms, sliced poblano pepper and sliced garlic cloves, and cook until tender.
2.Add thawed frozen corn, salt, and pepper, and cook for an additional 2-3 minutes.
3.Add torn spinach leaves and shredded cheddar cheese, and continue cooking until the spinach is wilted and the cheese is melted.
4.In a separate skillet, heat a flour tortilla over medium heat. Add half of the mushroom and spinach mixture to one half of the tortilla, leaving the other half empty.
5.Fold the empty half of the tortilla over the filling. Continue cooking until the tortilla is golden brown and crispy on both sides.
6.Repeat with the remaining tortillas and filling.
