Ingredients

1 1/2 lbs fresh white mushrooms , divided
1 large onion , quartered
1 clove garlic
3 tablespoons olive oil , divided
1 3/4 cups Italian style breadcrumbs , divided
3 tablespoons grated parmesan cheese
1 egg , lightly beaten
1/4 teaspoon ground black pepper
1 jar spaghetti sauce or ( 17 ounce ) jar alfredo sauce
Mushroom Croquettes are a unique appetizer that combines the delicious flavors of fresh mushrooms with breadcrumbs and parmesan cheese. Instructions

1.Wash 1 pound of the mushrooms and pat them dry with paper towels. Chop them into small pieces.
2.Peel the onion and garlic and chop them into small pieces.
3.In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic and sauté until they soften, about 5 minutes.
4.Add the chopped mushrooms to the skillet and continue to sauté until they release their water, about 10 minutes. Once the water has evaporated, remove from heat and let the mixture cool.
5.In a large mixing bowl, combine the mushroom mixture, 3⁄4 cup of breadcrumbs, parmesan cheese, egg, and pepper. Mix until well combined.
6.Roll the mixture into small balls or croquette shapes.
7.Coat the balls in the remaining breadcrumbs and refrigerate for at least 30 minutes.
8.In a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Once the oil is hot, add the croquettes and cook until golden, about 3-5 minutes per side.
9.Serve hot with a jar of spaghetti sauce or alfredo sauce
