Instructions

1.In a large skillet, melt 1 1/2 teaspoons butter with 1 1/4 teaspoons olive oil over medium-high heat.

3.Add chopped onion, chopped carrot, and chopped celery. Cook and stir for 5 more minutes.
4.Pour in white wine and beef broth. Add tomato paste, 1 teaspoon butter, and enoki mushrooms. Stir in heavy cream and nutmeg. Bring to a boil and season with salt and pepper, to taste.
5.Reduce heat to low and simmer for 15 minutes, or until sauce has thickened to desired consistency.
