Ingredients

1 pork tenderloin
2 tablespoons Worcestershire sauce , divided
1/2 small onion
1/4 cup chopped mushrooms
3 cloves garlic , minced
1 teaspoon steak seasoning
1 small chorizo sausage , thinly sliced , slices cut in half

Instructions

1.Preheat oven to 400°F (200°C).
2.Butterfly the pork tenderloin by cutting it down the middle but not all the way through; open the meat and flatten it.

4.In a frying pan, sauté onions, mushrooms, garlic, and chorizo for 5 minutes.

6.Roll up the pork tenderloin and over lap the edges at the top to form a seam.
7.Tie the pork tenderloin at intervals with kitchen string.
8.Brush the other tablespoon of Worcestershire sauce over the top of the tenderloin.
9.Bake for 30-40 minutes or until a thermometer reads 145°F (63°C) when inserted into the thickest part.
10.Let the meat rest for 5-10 minutes before removing the string and cutting into slices.
