2 1/4 pounds boneless lamb shoulder , cut into 1 1/2 inch pieces
3 onions , sliced
1 3/4 cups chopped tomato
1 2/3 tablespoons garlic paste
1 2/3 tablespoons ginger paste
1 tablespoon black peppercorns
1 cinnamon stick
1/4 cup dried chile de arbol peppers
5 whole clove
1 teaspoon black cardamom seeds
9 tablespoons ghee ( clarified butter )
1 tablespoon salt

Instructions

1.Heat 3 tablespoons of ghee in a large deep pot over medium-high heat.
2.Add the sliced onions and cook until golden brown, stirring occasionally.
3.Add the lamb to the pot and cook until browned on all sides.
4.Add the garlic paste, ginger paste, and chopped tomato to the pot, stirring to combine.
5.Tie the black peppercorns, cinnamon stick, chile de arbol peppers, whole clove, and black cardamom seeds in a cheesecloth and add it to the pot.
6.Add enough water to cover the lamb and bring the mixture to a boil.
7.Reduce the heat to low and simmer for 2-3 hours, or until the lamb is tender.
8.Remove the cheesecloth bundle from the pot and discard.
9.Stir in the remaining 6 tablespoons of ghee and salt to taste.
10.Serve hot with your choice of rice or bread.
