Ingredients

6 baby eggplants
3 teaspoons salt
1 teaspoon fennel seed
1/2 teaspoon coriander seed
1 1/2 teaspoons cumin seeds
1 teaspoon fenugreek seeds
1 1/2 teaspoons mustard seeds
1 teaspoon coriander powder
1 teaspoon chili powder
1/2 teaspoon turmeric
2 tablespoons lemon juice
2 medium tomatoes
3 dried red chilies
4 curry leaves
deep frying oil
1/4 cup oil
Musalaydaar Baingun is a popular Indian eggplant curry that is usually cooked as a side dish. The dish is made by stuffing eggplants with a special masala mix made of spices like fennel seed, coriander seed, and mustard seeds. Once the eggplants are stuffed, they are deep-fried until golden brown and then cooked in a tomato-based gravy. The dish is widely popular in North Indian cuisine and is loved for its rich and flavorful taste. It can be eaten with a variety of Indian bread like roti or rice.

Instructions

1.Rinse and pat dry the baby eggplants. Make 2 vertical slits and keep them aside.
2.In a pan, roast fennel seed, coriander seed, cumin seeds, fenugreek seeds, and mustard seeds. Once they emit an aroma, grind them.
3.In a mixing bowl, mix together 3 teaspoons salt, ground spice mix, coriander powder, chili powder, turmeric, and lemon juice. Mix well to form the masala mix.
4.Stuff the prepared masala mix generously into the slits in eggplants.
5.In a wok, heat deep frying oil. Fry eggplants until they turn golden brown and keep them aside.
6.In a separate pan, heat 1/4 cup oil and add dried red chilies and curry leaves. Sauté them for 1 minute and add chopped tomatoes. Cook till they become mushy. Add 1/2 teaspoon salt and mix well.
7.Add fried eggplants and mix well. Cook for 8-10 minutes over medium-high flame.
8.Garnish with fresh coriander leaves and serve hot with roti, chapati, or rice.
