Ingredients

1 1/2 cups glutinous rice ( soak 4hrs or overnight )
1 1/2 cups mung beans , split ( yellow , soak 4+hrs )
1 1/2 teaspoons sugar
1 teaspoon salt
2 tablespoons sugar
1/2 teaspoon salt
2 tablespoons roasted sesame
Mung Beans Sticky Rice (Vietnamese Xoi Vo) is a popular dish in Vietnam, typically eaten for breakfast or as a snack. It is made from glutinous rice and mung beans, which are boiled together until they become soft and sticky. The rice and beans are then seasoned with sugar, salt, and roasted sesame seeds, giving the dish a sweet, savory, and nutty flavor. Xoi Vo is a versatile dish that can be eaten on its own, or paired with other foods such as meat or vegetables. It is a common street food in Vietnam and enjoyed by people of all ages.

Instructions

1.Drain the soaked glutinous rice and put it into a pot. Add 1 tsp of salt and mix well.
2.Add the soaked mung beans and 1 1/2 tsp of sugar. Add just enough water to cover the rice and beans. Mix well and cover the pot with a lid.
3.Bring the pot to a boil on high heat. Stir occasionally to make sure that the rice and beans do not stick to the bottom of the pot.
4.Once the water has come to a boil, cover the pot with a lid and reduce the heat to the lowest setting, or use a diffuser. Cook for another 20-25 minutes until the rice is cooked through and the beans are soft.
5.In a separate pan, roast the sesame seeds until golden brown.
6.When the rice and beans are cooked, remove the lid and fluff the rice with a fork. Add 2 tbsp of sugar and 1/2 tsp of salt. Mix well.
7.Transfer to a serving plate and sprinkle with the roasted sesame seeds. Serve hot or warm.
