125 g plain sweet biscuits
1/4 cup cocoa
1 cup icing sugar
1/2 cup coconut
100 g soft butter
2 tablespoons sherry wine
1 teaspoon rum & butter flavoured spice essence ( I use Rawleighs brand )

Instructions

1.Crush the biscuits in a ziplock bag until they resemble fine crumbs.
2.In a large mixing bowl, combine the biscuit crumbs, cocoa powder, icing sugar, and coconut.
3.Add the soft butter, sherry wine, and rum and butter flavoured spice essence. Mix until well combined.
4.Form the mixture into small balls, about the size of a walnut.
5.Roll each ball in coconut to coat.
6.Chill the truffles in the fridge for at least 30 minutes before serving.
