Mum's homemade curry and rice is a classic comfort food that never fails to satisfy. It is a staple in many households and can be enjoyed year-round. The recipe is simple and easy to follow, and it can be made with ingredients that are readily available in most grocery stores. The beef is tender and juicy, and the curry sauce is flavorful and spices up the rice. This dish is perfect for a cozy night in with loved ones or as a meal prep option for busy weekdays.

Instructions

.Cut the rump steak into small, bite-size pieces.
.In a frying pan over medium heat, sauté the chopped yellow onion in butter or oil until translucent.
.Add the beef to the onions and fry until browned.
.Add 1 tablespoon of mild curry powder (adjust as necessary) and a bay leaf into the pan and stir well.
.Cover the pan with a lid and simmer for 30 minutes, checking occasionally to see if more water is needed.
.After 30 minutes, mix the arrowroot in a small bowl with some water until smooth, then add it to the pan and stir well.
.Simmer for another 10 minutes until the sauce thickens.
.While the curry is cooking, prepare the rice. Rinse the rice until the water runs clear and then add it to a pot with twice the amount of boiling water (1:2 ratio). Add a pinch of salt and stir. Cover with a tight-fitting lid and bring to a boil over high heat. Reduce heat to a simmer and cook for 10-15 minutes. Fluff with a fork and serve alongside the curry.
