Ingredients

1 cup butter
1 cup brown sugar
1 teaspoon mixed spice
1 teaspoon cinnamon
1 tablespoon golden syrup ( optional )
5 eggs
1 cup plain flour
1/2 cup self raising flour
1/4 - 1/2 cup cold brewed tea
1/2 cup rum , overproof
1 orange , zest of , only
1 lemon , zest of , only
1/2 teaspoon salt
1/2 teaspoon bicarbonate of soda
1/2 cup soft breadcrumbs
1 1/2 - 1 3/4 cups raisins
1 1/2 - 1 3/4 cups sultanas
1 1/2 - 1 3/4 cups currants

Instructions

1.In a mixing bowl, cream the butter, brown sugar, mixed spice, cinnamon, and golden syrup together until smooth.

7.Cover the basin with a double layer of greaseproof paper, and secure with string or a rubber band.
8.Place the pudding in a large pot, and pour in boiling water to cover it.
9.Cover the pot with a tight-fitting lid and steam the pudding for around 6 hours, topping up the water as necessary.
10.After the pudding has been steamed, remove the paper and serve hot with some brandy butter or cream.
