Ingredients

1 1/2 kg self raising flour
2 1/2 cups sugar
4 tablespoons baking powder
2 teaspoons salt
6 cups natural bran
1 cup sunflower seeds
1 cup dried sultana
750 g butter
1 liter buttermilk
4 eggs

Instructions

1.Preheat oven to 160°C (fan) or 180°C (conventional).
2.Mix self raising flour, sugar, baking powder, salt and natural bran together in a large bowl.
3.Add sunflower seeds and dried sultanas and mix thoroughly. Rub butter into the mixture with your fingers until it resembles breadcrumbs.
4.Beat eggs, buttermilk, and a dash of milk together in a separate bowl. Combine the egg mixture with the dry ingredients, stirring well to combine.
5.Press the mixture into a greased and lined baking tray and bake for 45 minutes.
6.Remove from oven and leave to cool. Once cooled, cut into small squares or fingers and place on a baking sheet.
7.Reduce oven temperature to 60°C (fan) or 80°C (conventional), and dry the rusks in the oven for 4-6 hours or until completely dry and crunchy.
