Ingredients

1 roasting chicken , cut up
1/3 cup unsifted all-purpose flour
2 medium onions , peeled
4 carrots
2 stalks celery
2 tart apples
1/3 cup butter
1 1/2 tablespoons curry powder
4 teaspoons salt
3/4 teaspoon mace
1/4 teaspoon chili powder
1 dash cayenne
3/4 cup grated fesh coconut
1 bay leaf , crumbled
2 cans chicken broth
1 cup apple juice
1 cup light cream
1 cup cooked white rice
1/2 cup seedless raisin
1/4 cup slivered almonds
1/4 teaspoon cinnamon
1 dash mace
1/2 cup chopped parsley
Mulligatawny soup is a classic Anglo-Indian dish dating back to the early 1800s. The name 'mulligatawny' comes from the Indian Tamil language and loosely means 'pepper water.' This rich and flavorful soup is a unique fusion of Indian and British cooking styles and has become a favorite for many. In this recipe, we add a unique spin with the addition of a flavorful, spiced rice pilaf to complement the soup perfectly.

Instructions

1.Mulligatawny Soup:
2.Season the chicken with salt and pepper, then cover with flour.
3.In a large soup pot, sauté chicken pieces until browned.
4.Add onion, carrots, celery, and apple and continue to sauté for 5 minutes.
5.Add butter, curry powder, salt, mace, chili powder, and cayenne to the pot and stir to combine.
6.Pour in chicken broth and apple juice, then add crumbled bay leaf and grated coconut.
7.Bring to a simmer and cook for around 30-40 minutes.
8.Remove from heat and let the soup rest for 5 minutes before stirring in the light cream.

10.Boil rice until cooked, then drain and set aside.
11.Fry raisins and almonds in cinnamon and mace until lightly browned.
12.Stir in parsley and cooked rice and continue to heat for 3 minutes, stirring occasionally.
