Ingredients

2 cups whole red lentils
6 cups water
4 medium onions , sliced thin
1 cup olive oil or 1 cup vegetable oil
2 cups cooked rice
1/2 teaspoon salt ( to taste )
1/2 teaspoon pepper ( to taste )

Instructions

1.Rinse lentils under cold water and drain. Place lentils and water in a large pot and bring to a boil over high heat. Cover, reduce heat to medium and simmer for 30 minutes.
2.While lentils are cooking, heat oil in a large skillet over medium-high heat. Add onions and sauté until caramelized and brown, stirring occasionally. Set aside.
3.Remove lentils from heat and stir in rice, salt, and pepper.
4.Serve in a bowl, topped with caramelized onions. Enjoy!
