1 cup brown lentils , washed and picked over
1 cup rice
1 large onion , sliced
2 tablespoons olive oil
1 teaspoon allspice
2 cups water , to boil lentils
1 cup water , to cook rice and lentils
salt and pepper

Instructions

1.In a medium pot, add the lentils, water, and allspice. Bring it to boil.

4.Remove half of the caramelized onions and set them aside. Add the cooked lentils and rice to the pot. Add a pinch of salt and pepper. Stir to combine.
5.Add one cup of water to the lentil and rice mixture. Bring it to boil.
6.Place a clean dish towel over the pot. Cover the lid tightly with the towel. This will help absorb the excess steam. Reduce the heat to low and let it simmer for 15-20 min.
7.Once the rice has cooked, remove the pot from the heat. Let it sit covered for an additional 10 min.
8.Serve the dish topped with the reserved caramelized onions.
