Ingredients

1 inch fresh ginger , peeled and coarsely chopped
8 garlic cloves , peeled
6 tablespoons blanched almonds , slivered
4 tablespoons water
7 tablespoons ghee
3 lbs chicken parts
10 cardamom pods
1 inch cinnamon stick
2 bay leaves
5 whole cloves
2 medium onions , peeled and finely chopped
2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
7 tablespoons yoghurt
300 ml light cream
1 1/2 teaspoons salt
2 tablespoons golden raisins
1/2 teaspoon garam masala

Instructions

1.In a food processor, combine ginger, garlic, almonds, and water. Blend until the mixture forms a paste.
2.In a large skillet, melt ghee over medium heat. Add chicken parts and cook until golden brown on all sides. Remove chicken from skillet and set it aside.
3.Add cardamom pods, cinnamon stick, bay leaves, cloves, and onions to the skillet. Cook until onions become translucent and tender.
4.Add the ginger mixture, ground cumin, and cayenne pepper to the skillet. Cook for 1-2 minutes, stirring continuously.
5.Add yoghurt and the browned chicken. Mix to evenly coat the chicken with the spices.
6.Reduce heat to low, cover, and simmer for 20 minutes.
7.Remove lid and add light cream, salt, golden raisins, and garam masala. Cook for an additional 5-8 minutes, until the chicken is cooked through and the sauce has thickened.
