Ingredients

3/4 cup ghee
1/4 cup oil
1 kg mutton , cubed
2 teaspoons crushed ginger-garlic paste
1/2 cup yogurt
6 medium onions , sliced , fried brown
3 teaspoons coriander powder
1 teaspoon cumin powder
1/2 teaspoon turmeric powder
1 teaspoon kashmiri chili powder
1 cup cilantro , chopped
1/2 cup mint leaf , chopped
2 green chilies , chopped
2 tomatoes , chopped
1/2 teaspoon saffron , soaked in a little warm milk
20 almonds , slivered
1 cup cashews , deep fried
1 cup raisins , deep fried
3 1/2 cups basmati rice , washed and drained
6 cups hot water
4 black cardamom pods
8 green cardamoms
2 cinnamon sticks
2 bay leaves
6 cloves
salt

Instructions

1.In a large pot, heat the ghee and oil over medium heat.
2.Add the cubed mutton and sauté for 5-7 minutes or until browned.
3.Add the ginger-garlic paste and mix well.
4.Reduce heat to low and add the yogurt, fried onions, coriander powder, cumin powder, turmeric powder, and kashmiri chili powder, stirring well.
5.Add the cilantro, mint leaf, green chilies, chopped tomatoes, saffron-soaked milk, almonds, cashews, and raisins. Mix well and cover the pot.
6.In a separate pot, bring 6 cups of water to a boil. Add rice and the spices: black cardamom pods, green cardamoms, cinnamon sticks, bay leaves, and cloves. Cook for 10-12 minutes until the rice is al dente.
7.Strain the rice and spices and layer the cooked rice over the meat mixture in the pot. Cover and cook on low heat for 30 minutes.
8.Serve hot garnished with some fried onions, cashews, and cilantro.
