Ingredients

Instructions

1.Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
2.In a large bowl, whisk together the chestnut flour, white sugar, vanilla sugar, and baking powder.
3.Mix in the melted butter and eggs until everything is well combined.
4.In a separate bowl, toss the bananas in 1 tablespoon of white sugar until coated.
5.Heat a non-stick skillet over medium heat and add the remaining tablespoon of white sugar. Once the sugar has melted, add the bananas in a single layer and cook until caramelized, about 1 minute on each side.
6.Fold the caramelized bananas into the muffin mixture and spoon the batter into the prepared muffin tin.
7.Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
8.For the icing, beat together the cream cheese, butter, confectioners' sugar, and vanilla extract until smooth and creamy. Spread the icing over the cooled muffins.
