Ingredients

2 cups self-raising flour
1/3 cup caster sugar
50 g butter ( cold finely chopped plus extra to serve )
3/4 cup muesli ( toasted fruit )
1 cup milk

Instructions

1.Preheat the oven to 220°C. Line a baking tray with baking paper.
2.Sift flour into a bowl, stir in sugar and add butter.
3.Rub the butter into the dry mixture until it resembles crumbles.
4.Stir in the toasted muesli.
5.Add the milk and mix the dough until combined.
6.Turn the dough onto a lightly floured surface and knead gently until smooth.
7.Pat the dough out to about 2cm thickness.
8.Use a 6cm round scone cutter to cut out scones. Place them on the lined tray, leaving room for spreading.
9.Brush the tops of scones with extra milk.
10.Bake it in the preheated oven for 12-15 mins, or until scones are golden and sound hollow when tapped on the base.
