2 large eggs , lightly beaten
2 teaspoons fresh ginger
1 garlic clove , finely chopped
1/4 teaspoon hot red pepper flakes
1 bag coleslaw mix
1/4 cup water
2 tablespoons soy sauce
1 teaspoon sesame oil
3 tablespoons hoisin sauce
1 bunch scallion , coarsely chopped
8 flour tortillas ( not low-fat )
2 1/2 - 3 cups cooked chicken

It usually consists of stir-fried scrambled eggs, wood ear mushrooms, and shredded pork or chicken, wrapped in thin pancakes with hoisin sauce. This simplified version uses coleslaw mix as a base, adds chicken for protein and flavor, and serves it all in a flour tortilla. Instructions

1.Heat 1 tablespoon of peanut oil in a large skillet over medium-high heat.
2.Add the beaten eggs and cook until set, about 1-2 minutes.
3.Transfer the eggs to a plate and wipe out the skillet.
4.Heat the remaining 3 tablespoons of peanut oil in the same skillet over high heat.
5.Add the ginger, garlic, and red pepper flakes, cook for 30 seconds.
6.Add the coleslaw mix and water, cook until the cabbage is wilted, about 2-3 minutes.
7.Stir in the soy sauce, sesame oil, hoisin sauce, and scallions, then add cooked chicken and reserved eggs, stir well to combine.
8.Warm tortillas in the microwave or on a dry skillet for a few seconds until pliable. Spoon a few tablespoons of the chicken and cabbage filling onto each tortilla and drizzle with additional hoisin sauce and chopped scallions, then roll up and serve.
