Ingredients

1 tablespoon rice wine
2 teaspoons sesame oil
1 tablespoon soy sauce
1 lb chicken breasts or 1 lb pork , cut into strips
3 tablespoons chicken broth
2 tablespoons rice wine
2 teaspoons sesame oil

1/2 teaspoon sugar
1/4 teaspoon black pepper
1/2 lb mixed mushrooms , thinly sliced
2 cups slivered green cabbage
1 red bell pepper , seeded and julienned
4 green onions , thinly sliced
4 tablespoons peanut oil , divided use
4 large eggs
2 teaspoons sesame oil
2 garlic cloves , minced
1 tablespoon minced fresh ginger or 1 teaspoon dried ginger
hoisin sauce
12 moo shu pancakes or 12 homemade Chinese pancakes

Instructions

1.In a small bowl, combine rice wine, sesame oil, and soy sauce. Add chicken or pork and toss to coat. Let marinate for at least 10 minutes.
2.In another bowl, whisk together chicken broth, rice wine, sesame oil, soy sauce, cornstarch, sugar, and black pepper. Set aside.
3.In a large skillet or wok, heat 2 tablespoons of peanut oil over high heat. Add mushrooms and stir-fry for 2 minutes, or until mushrooms are golden brown. Add cabbage, red bell pepper, and green onions and stir-fry for another 2 minutes.
4.Remove vegetables from skillet and set aside. Heat remaining 2 tablespoons of peanut oil in the same skillet. Add chicken or pork and stir-fry for 2-3 minutes, or until cooked through.
5.Push the meat to one side of the skillet and add the eggs to the empty side. Scramble the eggs until cooked, then mix with the meat.
6.Add garlic and ginger to the skillet and stir-fry for 1 minute. Return vegetables to the skillet and stir-fry for another minute.
7.Add the sauce to the skillet and stir-fry until everything is coated and the sauce has thickened slightly. Serve hot with hoisin sauce and Chinese pancakes.
