Ingredients

1 large eggplant
2 -3 tablespoons tahini
1 to 2 lemon , juice of
1 -2 garlic clove , crushed
1 teaspoon salt
2 -3 tablespoons yoghurt

Instructions

1.Preheat the oven to 200C/400F/gas mark 6.
2.Prick the eggplant, then bake for 40-50 minutes, until soft, turning once.
3.Cut the eggplant open, scrape out the flesh and discard skin.
4.Puree with tahini, lemon juice, crushed garlic and salt.
5.Add yoghurt and mix well.
6.Adjust seasoning to your liking.
7.Serve M'tabbal chilled with pita bread, veggie sticks, or crackers.
