Instructions

1.Preheat the oven to 180°C (160°C fan). Grease and line a 23 cm round cake tin and set aside.
2.In a large mixing bowl, cream together the butter and caster sugar until light and fluffy.
3.Gradually add the flour to the creamed mixture, whisk in the eggs, and mix well.
4.Add the caraway seeds, brandy or wine, mace, nutmeg, and citrus peel if using, and mix until everything is well combined.
5.Spoon the mixture into the prepared tin and smooth the surface with a spatula.
6.Bake the cake for 1 hour and 45 minutes, or until a skewer inserted into the centre of the cake comes out clean.
7.Let the cake cool in the tin for 5-10 minutes before turning it out onto a wire rack to cool completely.
8.Serve the cake sliced with a cup of tea or coffee.
