4 lemons
9 large eggs
375 g sugar

50 g icing sugar ( confectioners ' sugar )
264 g plain flour
108 g icing sugar ( confectioners ' sugar )
1/2 pinch salt
217 g unsalted butter , softened
2 large egg yolks

Instructions

1.Preheat the oven to 190C/170C fan (375F/Gas 5).
2.Cut the heads off the lemons, then slice them as thinly as possible. Remove all the seeds.

4.In a separate bowl, sift the flour, icing sugar, and salt together.

8.Pour the mixture into a 10-inch tart pan and smooth the top with a spatula.

10.Let the tart cool to room temperature, then dust with icing sugar.
