2 tablespoons ginger juice ( grated ginger squeezed to get the juice )
2 pieces salted anchovies ( again , find this in jars at the Korean grocers )
1 napa cabbage ( large , washed and cut into bite-sized pieces )
1/4 cup salt ( scant )
1 bunch green onion ( washed and sliced into 2 inch lengths )

Instructions

1.In a large mixing bowl, combine minced garlic, salted shrimp, fish sauce, hot red pepper paste, sugar, and ginger juice until well mixed.
2.Rinse and cut the napa cabbage into bite-sized pieces and add them to the mixing bowl.
3.Add salt and mix well, making sure that the salt is evenly distributed.
4.Add sliced green onions and mix well again.
5.Add salted anchovies and mix well one final time.
6.Transfer the mixture to a clean, airtight jar and let it ferment at room temperature for 1-2 days until it becomes sour and bubbly.
7.Store the jar in the refrigerator to slow down the fermentation process and enjoy the kimchee as a side dish, condiment, or ingredient in other dishes.
