Ingredients

1 teaspoon unsweetened cocoa powder
1 teaspoon dried Mexican oregano
1 teaspoon dried basil
1 teaspoon dried marjoram
2 teaspoons ground cumin
1 tablespoon hot chili powder
1 teaspoon garlic powder
2 teaspoons hickory smoked salt
1 teaspoon ground black pepper
2 teaspoons cayenne pepper
2 pounds buffalo stew meat , cubed
2 pounds chorizo sausage , chopped
2 pounds pork stew meat , cubed
2 slices hickory-smoked bacon , diced
3 sweet onions , coarsely chopped
2 habanero peppers , seeded and chopped
4 jalapeno peppers , seeded and chopped
7 cloves garlic , minced
2 teaspoons New Mexico chile powder
1 tablespoon lard , or more as needed
1 can tomato paste
1 bottle dark beer , or as needed
The Mr. Bill's New Mexico Buffalo Chili is a Texan style dish that is a perfect balance of spicy and rich. Unlike most chilis that use beef as the main ingredient, this recipe uses buffalo meat. Buffalo is much leaner, which makes this chili healthier than traditional recipes. Prepared with a mix of spices like cocoa powder, Mexican oregano, basil, marjoram, cumin, and chili powder, that perfectly complement each other. The heat is provided by a blend of jalapeno and habanero peppers. This chili is perfect for a cozy dinner or as an addition to game day party menu.

Instructions

1.In a medium-sized bowl mix together cocoa powder, Mexican oregano, basil, marjoram, cumin, hot chili powder, garlic powder, hickory smoked salt, black pepper, and cayenne pepper.
2.In a large Dutch oven or stockpot, add small portions of the cubed buffalo stew meat and brown them well over medium-high heat. Once finished remove it from the pot and do the same with the chorizo and pork stew meat.
3.While the meat is frying, cook the bacon in a frying pan over medium-high heat until crisp
4.Add onions, habanero peppers, jalapeno peppers, garlic and New Mexico chile powder to the Dutch oven or stockpot along with a bit of lard, saute for 7-8 minutes.
5.Add the browned buffalo, chorizo, and pork stew meat into the Dutch oven or stockpot containing vegetables, and cook for about 10 minutes, stirring frequently. Add tomato paste and enough dark beer to comfortably cover everything. Continue to cook for 2-3 hours, adding beer if necessary.
6.Serve hot and enjoy!
