Ingredients

2 cups white Urad Dal
1/2 cup water
400 g plain low-fat yogurt , beaten
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seed
1 teaspoon sugar
1/4 teaspoon red chili powder
4 fresh curry leaves , washed and torn between the palms of your hands
2 green chilies , washed
salt
oil , to deep fry
2 medium finely chopped onions , to garnish
2 tablespoons finely chopped fresh coriander leaves , to garnish
2 tablespoons of sweet chutney , to garnish ( meethi )
Dahi Vada is a popular street food and a side dish in India, made using lentil balls that are soaked in spiced yogurt. Originating from the state of Orissa in Eastern India, this delicious dish is perfect for parties and gatherings. Dahi Vadas are considered an all-time favorite snack which is palatable and satisfying. These airy and spongy vadas are a vegetarian alternative to meatballs and go perfectly with a cooling glass of lassi or buttermilk. The tangy and flavorful dish has numerous variations with each region having its take on the recipe.

Instructions

1.Soak the urad dal for 4 hours.
2.Grind the dal into a coarse paste along with green chilies and a little water.
3.Add salt and mix well.
4.Heat oil in a kadai (wok) over medium heat.
5.Wet your palms and take 1 tablespoon of the mixture and shape into a ball, and slide into the hot oil.
6.Deep fry until golden brown.
7.After frying, place the vadas in a bowl with water for 10 minutes.
8.Squeeze out the water gently and put the vadas in another bowl.
9.Pour the beaten yogurt over the vadas, ensuring that they are completely covered.
10.In a separate pan, heat oil and add mustard seeds, cumin seeds, curry leaves, and green chilies.
11.Once the seeds start to pop, add water, sugar, red chili powder, and salt.
12.Boil for 5 minutes and then remove from heat.
13.Pour the mixture over the vadas.
14.Garnish with chopped onions, coriander leaves, and chutney.
15.Serve chilled.

These vadas are rich in protein and low in fat.
