Ingredients

1 package mozzarella cheese
16 ounces dried orzo pasta , uncooked
2 tablespoons butter
2 tablespoons olive oil
1 1/2 cups chopped onions
2 cups chopped celery
2 tablespoons all-purpose flour
1 cup chicken broth or 1 cup vegetable broth
1 can plum tomatoes , drained
1 tablespoon fresh basil
1/2 teaspoon dry crushed red pepper
2 cans sliced ripe olives , drained
1/4 teaspoon salt

Instructions

1.Preheat oven to 375 degree.
2.Cook pasta as per the package instructions.
3.Meanwhile, heat butter and oil in a sauté pan and add chopped onions, celery and garlic, cook 8 minutes or until tender.
4.Stir in flour, cook 1 minute.
5.Gradually stir in broth, bring to a boil, stirring constantly.
6.Stir in tomatoes, basil, crushed red pepper, mozzarella cheese, salt, and olives.
7.Drain pasta. Toss with cheese mixture and spoon into a 2 quart baking dish.
8.Bake 20 minutes or until hot and bubbly.
