3 1/2 ounces candied ginger , coarsely chopped ( about 1/2 cup )

Instructions

1.Preheat the oven to 350°F.
2.In a medium-sized bowl, whisk together the flour, cloves, ginger, cinnamon, baking soda and salt.
3.In a separate bowl, cream together the butter, sesame oil and dark molasses until light and fluffy.
4.Add in the sugar and egg and continue beating until the mixture is well combined.
5.Gradually add in the flour mixture and mix until just combined.
6.Fold in the crystallized ginger.
7.Take tablespoonfuls of the dough and roll into balls.
8.Place the balls onto a parchment-lined baking sheet, spacing them about 2 inches apart.
9.Bake the cookies for 12 to 15 minutes, until they are set and golden.
10.Remove from the oven and let cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
