Ingredients

4 medium eggplants
4 cloves garlic
1/4 cup fresh basil
2 fresh green chile peppers
1/4 cup tahini
4 tablespoons fresh lemon juice
1 teaspoon salt
1 sprig fresh mint
1 teaspoon olive oil
Moutabel is a traditional Middle Eastern eggplant dip similar to Baba Ganoush, but with a slightly different flavor. This recipe is healthy and is great to serve as an appetizer. Eggplants are the main ingredient and their smoky flavor is enhanced by the garlic, basil, chili peppers, and tahini used in this recipe. This dip is often paired with warm pita bread or crackers.

Instructions

1.Preheat oven to 200 degrees C.
2.Pierce eggplants several times with a fork.
3.Place eggplants on a baking sheet and roast in preheated oven for 30 to 40 minutes, turning occasionally, until they are completely soft.
4.Remove from oven and let eggplants cool.
5.Cut off the stem of the eggplants and peel the skin.
6.Place the eggplant flesh, garlic, basil, green chili peppers, tahini, lemon juice, and salt in a blender and pulse until smooth.
7.Drizzle olive oil on top and garnish with mint.
8.Serve with warm pita bread or crackers.
