1 1/2 lbs fillets of sole or 1 1/2 lbs filet turbot
3 egg whites

Instructions

1.Preheat oven to 325°F.
2.In a blender, mix fillets, egg whites, cognac, salt, cayenne, and heavy cream. Blend until smooth.
3.Pour the mixture into a large mixing bowl, and fold in 3 tablespoons of chopped truffles.
4.In a separate saucepan, melt the Kerry gold sweet butter over medium heat. Stir in the flour, curry powder, and salt until fully combined. Slowly stir in light cream and bring to a boil stirring constantly. Remove from heat.
5.In another mixing bowl, beat two egg yolks until they are light in color. Gradually stir in the hot cream sauce. Once combined, pour the cream sauce into the fish mixture and fold.
6.Lightly butter 8 ramekins and pour the mixture into them, filling them two-thirds of the way. Place the ramekins in a roasting pan and fill the pan with hot water halfway up the sides of the ramekins.
7.Bake in the oven for approximately 35 minutes or until golden brown on top. Remove from heat and sprinkle chopped truffle and parsley on top. Serve hot.
