Instructions

1.Preheat the oven to 375°F.
2.Slice the eggplant into 1/4 inch thick slices and brush with olive oil.
3.Heat a grill or grill pan and grill the eggplants for 2-3 minutes per side or until they become lightly charred.
4.In a large frying pan, sauté onions and garlic in a tablespoon of olive oil over medium-high heat until onion softens.
5.Add the ground lamb and cook until brown for 5 minutes.
6.Add diced tomatoes, fresh basil, salt, and pepper, reducing heat to low and simmer the lamb mixture for 8-10 minutes or until it thickens.
7.Layer the eggplants in a baking dish and pour the lamb mixture over them.
8.In a separate bowl, mix together halloumi cheese, ricotta cheese, flour, eggs, and milk, and spoon this on top of the lamb mixture.
9.Bake 35–40 minutes until the cheese topping is golden and bubbly.
