Ingredients

1 small brown onion , chopped finely
1 garlic clove , crushed
1 tablespoon beef stock
170 g lean ground beef
2 small tomatoes , chopped coarsely
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup beef stock , extra
2 tablespoons flat leaf parsley , chopped coarsely
2 tablespoons fresh basil , chopped coarsely
1 medium eggplant
1 small red capsicum , quartered
1/4 cup skim-milk natural yogurt
2 teaspoons lemon rind , finely grated
1 tablespoon lemon juice
20 g baby rocket
Moussaka Stack is a variation of the traditional Greek dish and has its origins in the Middle East. This dish typically consists of layered eggplant, meat, and tomato sauce, which is then topped with a creamy bechamel sauce. However, this version eliminates the bechamel and instead focuses on grilling the vegetables and using a yogurt sauce for added flavor. Instructions

1.Preheat oven to 200°C (180°C fan-forced).
2.Spray a non-stick frying pan with cooking spray and heat over medium heat.
3.Cook onion and garlic, stirring for 2-3 minutes or until softened.
4.Add beef stock and beef; cook, stirring to break up mince, for 5-7 minutes or until mince is browned.
5.Stir in tomatoes, cinnamon, nutmeg and extra stock; bring to the boil. Simmer, uncovered, for 10 minutes.
6.Stir in parsley and basil. Remove from heat.
7.Meanwhile, slice eggplant thinly. Grill or barbecue eggplant and capsicum until tender.
8.Combine yoghurt, lemon rind and juice in a small bowl.
9.Layer eggplant and capsicum on serving plates. Spoon meat mixture over vegetables. Drizzle yoghurt mixture over meat. Serve with rocket.
