8 medium potatoes

24 ounces Ragu tomato sauce ( or other pasta sauce )
1 garlic clove , minced
14 1/2 ounces butter beans ( or fresh cooked lentils )
3/4 cup parmesan cheese
2 tablespoons butter
16 ounces milk
1/3 cup flour
1 pinch nutmeg ( optional )
1/2 teaspoon salt
1/4 teaspoon white pepper
1 egg
1/4 - 1/2 cup breadcrumbs ( optional )

This recipe puts a twist on the classic dish by using sliced potatoes instead of eggplant. It also uses a tomato-based pasta sauce instead of the usual tomato puree. Instructions

1.Preheat the oven to 375 degrees Fahrenheit.
2.Peel and slice the potatoes, then boil them until tender.

4.Add the pasta sauce and beans or lentils, then simmer for 10-15 minutes.
5.In a saucepan, melt the butter over medium heat. Whisk in the flour and nutmeg until smooth. Gradually stir in the milk and cook until thickened, stirring constantly.
6.Beat the egg in a small bowl and add it to the milk mixture, stirring constantly.
7.Spread half of the potatoes in a greased 9 x 13 inch baking dish. Spoon the beef mixture over the potatoes, then sprinkle half of the parmesan cheese on top. Layer the remaining potatoes on top, then spoon the milk mixture over the potatoes. Sprinkle with the remaining parmesan cheese and breadcrumbs, if desired.
8.Bake for 30-40 minutes, until the top is golden brown and the casserole is heated through.
