Ingredients

2 whole chicken , about 2 lb each
salt and pepper
1/3 cup olive oil
3 medium red onions , sliced
3 teaspoons sumaq
2 arab flat bread ( khoubiz ) or 2 pita breads , plain
Mousakhan is a traditional Palestinian chicken dish usually served on big family occasions, particularly in the Palestine region. The chicken is seasoned with Middle Eastern spices, creating a mouth-watering aroma, and then oven-baked to perfection. The bread is then placed on top of the chicken, and once finished cooking, all of the flavors and spices mix together giving a sweet and tangy flavor. Try this recipe at home and it's sure to become a family favorite.

Instructions

1.Preheat the oven to 200°C/400°F.
2.Rinse the chicken and pat it dry with a kitchen towel. Sprinkle it with salt and pepper, inside and outside.
3.Heat 3 tablespoons of olive oil in a large frying pan and fry the sliced onions until they are golden brown for around 15 minutes.
4.Add 3 teaspoons of sumaq to the mixture. Spread a tablespoon of the mixture inside the chicken and then stuff it with half of the mixture. Do the same with the other chicken and set aside any remaining onion mixture for later.
5.Tie the chicken legs with kitchen twine, put them in a baking dish and brush with ⅓ cup of olive oil.
6.Place the bread on top of the chicken, overlapping if needed. Brush with remaining onion mixture.
7.Bake the chicken for 50 minutes to 1 hour or until the juices run clear when you poke a leg. The bread should be crispy.
8.Cut the bread into pieces and mix it with the onion and chicken juices.
9.Serve hot with a fresh salad or as desired.

This dish is oil rich so be mindful of how much olive oil is added.
