3 lbs mussels , well scrubbed and beards removed
2 shallots , chopped
2 cups dry white wine ( try a Muscadet , Sancerre or Sauvignon Blanc )
3 -4 slices day-old coarse country bread , torn into large pieces
lemon wedge , for serving

Instructions

1.Preheat oven to 400°F.

4.Remove mussels from pot, saving 1/2 cup of the broth.
5.Remove one side of the shell from the mussels.
6.In a baking dish, lay the mussels flat side up.
7.Spoon the green garlic butter on top of the mussels.
8.Sprinkle bread pieces over the top of the mussels.
9.Pour 1/2 cup of broth from the Dutch oven over the bread and mussels.
10.Bake in the oven for 10 to 15 minutes until the bread is golden brown.
