1 lb lean lamb fillets , ground
1 onion , finely chopped
1/4 teaspoon salt
1 pinch pepper
2 tablespoons oil
2 cups beef broth
1/4 cup split peas , soaked overnight & drained
2 tablespoons oil
1 cup almonds , chopped
1/2 cup dried apricot , chopped
1/2 cup prune , chopped
Motanjen Khoreshe (lamb stew with dried apricots and prunes) is a hearty Iranian dish that is easy to make and satisfying. This stew is a perfect example of the rich cuisine of Persia, which has been influenced by the neighboring countries of the Middle East, Central Asia, and the Mediterranean. Instructions

1.In a pan, heat 2 tablespoons of oil and add finely chopped onion.
2.Fry onion until it turns golden brown.
3.Increase the heat, add the lamb and cook until it changes color.
4.Add salt, pepper, soaked split peas, and beef broth. Cover firmly and simmer for 45 minutes.
5.In a separate pan, heat 2 tablespoons of oil and add chopped almonds. Stirring constantly, fry for one minute. Then add dried apricots and prunes to the pan.
6.When the stew is cooked, add fried almonds, dried apricots, and prunes to it and let it simmer for 10 minutes more.
7.Taste and adjust the seasoning, then transfer it to bowls and serve hot.
