Instructions

1.Rinse the rice under cold water in a fine mesh strainer until the water runs clear. Drain well.
2.In a large pot or dutch oven, heat the olive oil over medium heat. Add the onions and cook for 2-3 minutes until softened. Add garlic and cook for an additional 30 seconds.
3.Add the rice to the pot, stirring to coat it in the oil. Continue cooking for 2-3 minutes until the rice is slightly toasted.
4.Add the tomatoes, beef consomme, cumin, and salt to the pot and give everything a stir to combine. Bring to a simmer.
5.Reduce the heat to low, cover the pot and simmer for 20-25 minutes or until the liquid is absorbed and the rice is tender.
6.Remove from heat and let the rice sit, undisturbed, for an additional 5 minutes to allow it to fully absorb the liquid. Fluff with a fork and serve immediately.
