Ingredients

4 large carrots , finely julienned
1 tablespoon sugar
3 tablespoons cider vinegar
salt & freshly ground black pepper
3 tablespoons canola oil , divided
1 lb beet , peeled and finely julienned
1/2 small red onion , cut into slivers
1/4 cup water
1/2 cup mayonnaise
3 tablespoons prepared horseradish , drained and squeezed dry
1 1/2 lbs chicken breasts , skinless , boneless , pounded to 1/4 inch thickness
2 French baguettes
8 lettuce leaves , large green leaf
Originating in Vietnam, Bahn Mi sandwiches have become increasingly popular worldwide in recent years. This Moscow inspired version incorporates the typical Bahn Mi components of pickled carrots, cilantro, and meat, but takes it up a notch with horseradish mayonnaise and beet slivers. With its perfect balance of sweetness, sourness, and spiciness, this dish is not only tasty but also healthy.

Instructions

1.In a bowl, combine the carrots, sugar, cider vinegar, salt and black pepper.
2.In a separate bowl, combine the beets, red onion, 1 tablespoon of canola oil, and water.
3.In another small bowl, mix the mayonnaise and horseradish and set aside.
4.Season the chicken with salt and black pepper and heat the remaining 2 tablespoons of canola oil over medium-high heat.
5.Fry the chicken for about 3 minutes on each side until it is cooked through.
6.Slice the baguettes lengthwise and spread the horseradish mayonnaise on both sides.
7.Top each with chicken, carrot mixture, beet mixture and lettuce leaves.
8.Close the sandwich, cut in half, and serve.
